Cookies for breakfast might seem like a bad idea, but in this case, it’s the opposite. That’s because these cookies are full of nutritious ingredients like oats, nuts, coconut, and applesauce.

Makes about 16 cookies

Prep time: 25 minutes

This is in addition to high antioxidant ingredients like dried blueberries and cacao nibs, so you’re getting a high fiber, antioxidant rich breakfast disguised as a cookie. Enjoy with a hard boiled egg for the perfect combo to keep you full until lunch.

Tip: Instead of jarred applesauce, you can easily make your own by simmering a large apple in a bit of water until soft and then mashing. You’ll get more nutrients that way, and a tastier treat!

Ingredients:

1/4 cup applesauce

1/4 cup maple syrup

1/4 cup coconut oil, melted

2 tablespoons almond butter

2 tablespoons ground flax seed

1/2 cup oats

1/2 cup almond flour

1/4 cup arrowroot

1 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon cinnamon

1/4 cup coconut flakes

1/4 cup cacao nibs

1/2 cup dried blueberries

1/2 cup chopped pecans

Ingredients

    Instructions

    • Preheat oven to 350 degrees F.
    • Combine the applesauce, maple syrup, coconut oil, almond butter, and flax in a bowl. Let stand for 5 minutes.
    • Add the remaining ingredients and mix well.
    • Use a cookie scoop and scoop onto parchment lined baking sheets.
    • Bake for 10-12 minutes. Let cool completely before serving.
    • Store in an airtight container or freeze for longer term storage.
