Blueberry Cacao Breakfast Cookies
Cookies for breakfast might seem like a bad idea, but in this case, it’s the opposite. That’s because these cookies are full of nutritious ingredients like oats, nuts, coconut, and applesauce.

This is in addition to high antioxidant ingredients like dried blueberries and cacao nibs, so you’re getting a high fiber, antioxidant rich breakfast disguised as a cookie. Enjoy with a hard boiled egg for the perfect combo to keep you full until lunch.
Tip: Instead of jarred applesauce, you can easily make your own by simmering a large apple in a bit of water until soft and then mashing. You’ll get more nutrients that way, and a tastier treat!
Ingredients:
1/4 cup applesauce
1/4 cup maple syrup
1/4 cup coconut oil, melted
2 tablespoons almond butter
2 tablespoons ground flax seed
1/2 cup oats
1/2 cup almond flour
1/4 cup arrowroot
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 cup coconut flakes
1/4 cup cacao nibs
1/2 cup dried blueberries
1/2 cup chopped pecans

- Preheat oven to 350 degrees F.
- Combine the applesauce, maple syrup, coconut oil, almond butter, and flax in a bowl. Let stand for 5 minutes.
- Add the remaining ingredients and mix well.
- Use a cookie scoop and scoop onto parchment lined baking sheets.
- Bake for 10-12 minutes. Let cool completely before serving.
- Store in an airtight container or freeze for longer term storage.
