Almond and Herb Crusted Pork Tenderloin

This super easy pork tenderloin is also nutritious and delicious.
Rolled in an herbed almond coating and then pan fried until browned, it’s finished in the oven for the most tender, mouthwatering meal you’ll eat all week.
When buying pork, you should buy pasture-raised, organic pork if possible. This not only tastes better, but is much more nutritious, and a good source of healthy fats. High quality meat means you don’t need a lot of ingredients to make it tasty and nutritious.
You can use almond flour in place of the almonds here, but it has a finer texture, so won’t be as crunchy. You can also add any combination of herbs and spices you like, so feel free to play around with the seasoning based on your personal preferences.
Serve this with your favorite veggies and a green salad for an easy and impressive weeknight meal that is nutritious and delicious.
Ingredients
1/2 cup finely chopped almonds
1 tablespoon Italian seasoning
1 1-1/2 pound pork tenderloin, patted dry
1 egg, beaten
4 slices bacon, diced
Sea salt and fresh ground pepper, to taste
Instructions
- Preheat oven to 400 degrees F.
- Combine the almonds and seasoning with a pinch of salt and pepper.
- Brush the pork tenderloin with the egg and coat with the almond mixture, pressing it lightly to make sure it sticks.
- In an ovenproof skillet, cook the bacon until crisp. Remove with a slotted spoon and drain on paper towels.
- Add the pork tenderloin to the skillet and cook on all sides until well browned, about 10 minutes.
- Transfer to oven and continue cooking about 15-20 minutes, until internal temperature reaches 145 degrees F.
- Let rest for 5 minutes before slicing and serving.
