Game Day Buffalo Chicken Meatballs

Ground chicken is an excellent source of protein, and these meatballs make an excellent snack.

Perfect if you’re looking for a healthy appetizer to make for a party, and easy enough to make in advance!

Makes about 24 meatballs

Prep time: 45 minutes

My husband absolutely loves these meatballs and they're an excellent alternative to greasy fried chicken wings. Compared to wings, they make an amazing party snack...they re-heat well and don't get slimy after they sit like buffalo wings.

You can also eat them on a salad or in lettuce wraps as a main meal (I know we do sometimes).

Tip: Use a cookie scoop to make your meatballs the same size. This not only makes them look better if you’re serving them for guests, but it also ensures that they cook evenly.

Ingredients:

1 pound ground chicken

1 onion, finely chopped

2 stalks celery, finely chopped

2 cloves garlic, minced

1/4 cup finely chopped parsley

1 teaspoon Italian seasoning

1 egg

2 tablespoons hot sauce, such as Frank’s Red Hot, plus more for serving

1/2 cup almond flour

Olive oil, for baking

Sea salt and fresh ground pepper, to taste

Instructions

  • Preheat oven to 375 degrees F.
  • Put all of the ingredients in a bowl and add a pinch of salt and pepper. Gently mix by hand, until the ingredients are just combined.
  • Line a baking sheet with parchment, and form the mixture in about 2 dozen equal sized meatballs. Lay on the baking sheet.
  • Brush with oil, and bake until cooked through, about 20-25 minutes.
  • When done, drizzle with more hot sauce, and spear with toothpicks before serving.
