Shrimp scampi is one of the most delicious ways to serve shrimp.

What could be better than lots of garlic and tons of butter, often served with giant bowl of pasta?

This version uses a combination of heart healthy olive oil and grass-fed butter, and gets tons of flavor from garlic and lemon.

Serves 4

Prep time: 20 minutes

I enjoy Shrimp Scampi served with zucchini noodles, cauliflower rice...simply use o your favorite sides.

A generous sprinkle of fresh herbs and optional Parmesan takes it to a new level.

It makes a fantastic meal that is nutritious and amazingly delicious.

Tip: Shrimp cook super fast, so make sure everything is ready to go before you turn on the heat. While they are easy to cook, they also easy to over cook, which leads to chewy, rubber like shrimp instead of the tender garlic butter shrimp we dream about.

Ingredients:

1 tablespoon grass-fed butter

1 tablespoon olive oil

1 shallot, minced

4 cloves minced garlic

1 pound large shrimp, peeled and deveined

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1/4 cup chicken broth

Zest and juice of 1 lemon

1/4 cup chopped fresh parsley leaves

Grated Parmesan cheese, for serving, optional

Zucchini noodles or cauliflower rice, for serving

Instructions

  • Heat a large skillet over medium high heat. Add the shallot, and cook for a minute. Add the garlic and the shrimp and cook for about 2 minutes.
  • Add the salt and pepper, chicken broth and lemon zest and juice. Cook for about 2 more minutes, stir in the parsley, and remove from heat.
  • Serve with your choice of sides and sprinkle with Parmesan if desired.
