Make Your Own Cassava Tortillas
I love making my own tortillas. These are super easy, don't take long (only 4 ingredients!), and my son loves helping.
You don't even need a press to make these!
Makes 4-6 tortillas

Cassava flour is a relatively new health and nutrition trend, and it looks like it’s not stopping anytime soon. Cassava is a root vegetable that when processed into flour has very similar properties to wheat flour.
This makes it ideal for foods like tortillas or other quick breads. It’s surprisingly easy to work with and does a good job mimicking the taste of wheat flour. You can find it at national chains like Whole Foods, but you may want to check online to see if you can find a better price.
Use these tortillas like you would any tortillas — for fajitas, wraps, or tacos. You can add seasonings like garlic powder or dried herbs and spices to add even more flavor.
Ingredients:
1 1/2 cups cassava flour
1 teaspoon kosher salt
1/4 cup olive oil
1/4 cup warm water

- Put all of the ingredients in a bowl and mix well until you have a soft dough. Divide into 4-6 equal sized pieces depending on how big you want them.
- On a clean surface, roll the pieces as flat as you can get them — if you have a tortilla press, that will work here too. Use a little bit more cassava flour if they stick.
- Heat a heavy skillet, such as cast iron, over medium high heat. Add the tortillas and cook until they start to bubble. Flip, and cook until lightly browned on both sides.
- Serve immediately with your favorite fillings.
