Antioxidant Rich Matcha Bites
If you're not a green tea drinker, you can get all the benefits of green tea in these tasty matcha bites!
Full of fiber and protein, these bite-sized snacks are perfect for a quick energy boost when you want to need to keep going on a busy afternoon. They also make a great desert.

Matcha is basically powdered green tea. It's rich in antioxidants that protect your cells and filled with bio-active compounds that can help reduce inflammation (and may even prevent some diseases!).
Some studies have shown Matcha can help to lower your metabolism, prevent cancer, and protect from heart disease.
Store them in the freezer, and you can just grab one for a quick bite sized treat.
Ingredients:
1/2 cup pitted and chopped dates
1/2 cup toasted pecans
1/4 cup cocoa powder
1 tablespoon matcha powder
1 teaspoon vanilla extract
1 teaspoon honey

Instructions
- Put all of the ingredients in a food processor and pulse until well combined. You should have a sticky dough.
- Line a baking sheet with parchment paper. Scoop balls about 1-2 teaspoons and roll. Lay on the baking sheet. Dust with more matcha if desired.
- Pop the sheet in the freezes for about 30 minutes until firm.
- Transfer to an airtight container and store in the freezer.
